Summer kale tofu salad

Did you ever think “Kale? No thank you!

Then this recipe is for you because I’ve been where you are and turns out the only reason I did not like kale was I did not know how to prepare it right. So today I would like to share a little secret that I think all kale admirers know – kale needs to be massaged.

We wash it, remove any hard stems, pour a bit of olive oil and massage it well using both hands for a few minutes. This will make kale soft and very tasty.

Now we can make this refreshing salad that only requires very few ingredients and is incredibly easy to make.

Ingredients:

  • 100 g kale
  • 1 bell pepper
  • a handful of sunflower seeds
  • a handful of pumpkin seeds
  • 1 large cucumber
  • 200 g tofu
  • olive oil
  • salt and pepper

Let’s wash kale, remove any hard stems, put it in a salad bowl and massage it with olive oil for a few minutes. You will notice when kale changes structure and becomes softer.

Let’s put kale aside and can chop bell pepper and cucumber. Then add them both, sunflower and pumpkin seeds to the same bowl of kale.

To prepare tofu, we need to drain it, dice it and fry on high heat with a bit of salt and pepper for 5-7 minutes. Let it cool for a couple of minutes and then add it to salad. Lightly season with salt and pepper and mix everything together.
