Sweet potato tofu scramble

Tofu scramble is a delicious and versatile vegan alternative to scrambled eggs. Made with tofu as the main ingredient, it can be seasoned and customized to suit your taste preferences.

Ingredients:

  • 4 small or 2 medium sweet potatoes
  • 400 g firm tofu
  • 2-3 bell peppers
  • olive oil
  • salt, pepper
  • dried herbs

I find it that the easiest way to cook sweet potatoes is in a microwave. Just need to wash them, pierce with a fork in several spots and microwave. One medium sweet potato takes about 4-5 minutes to cook depending on a microwave. You can cook them all at once, just check every couple of minutes if they are ready yet or not. My 4 small sweet potatoes took about 12 minutes to cook.

While we are waiting for sweet potatoes, wash and chop bell peppers. Take tofu out of the package, press excess water off with your hands and cut tofu into small cubes.

Once sweet potatoes are done, leave them for a couple of minutes to cool off, then peel and cut into small pieces or cubes.

In a pan, pour some olive oil, heat it, then cook tofu and peppers. Spice it with salt, pepper and cook for about 5 minutes on medium – high heat stirring constantly. Once it’s ready, add sweet potatoes and a mix of dried herbs. Cook for a minute.
