Sweet potato, cabbage and lentil stew

Do you ever wake up thinking ‘I just crave vegetables so bad today!’? I do. Weird, I know. But anytime I eat fewer vegetables and include more other products like fish or cheese, I go back to craving vegetables. I feel like by now my body just knows what makes me feel good. And so veggies it is. I made a stew this morning and it is so so good! Let me share this recipe with you. The way I made it is super easy, you just need a big pot. Basically just cut and throw things in a pot and let it cook.

Ingredients:

  • 1 big bulb of garlic
  • 1 big onion
  • 400 g mushrooms (I used chestnut mushrooms)
  • 2 medium sweet potatoes
  • 0.5 cup of red split lentils
  • a can of chopped tomatoes
  • a half of small cabbage
  • 3 bell peppers
  • 2 handfuls of spinach
  • salt, pepper
  • olive oil
  • a mix of fresh and/or dried herbs
  • turmeric
  • ginger powder

As I said, cooking is really basic. Just cut and throw things in a pot. First, chop the garlic and cut the onion. Cook it in a pot with a little olive oil. If it sticks to the bottom of the pot, then pour some water. Let it cook over medium heat while you cut the mushrooms. Add them and keep cooking.

Next, add peeled and cut sweet potatoes with lentils. Add chopped tomatoes and some water to cover vegetables, and let everything cook with a closed lid. In the meantime, chop the cabbage. Throw it in the pot and close the lid again.

Give it about 10 minutes or so while you cut the bell peppers. Add them to the mix, and season everything with some salt and pepper, turmeric, and ginger powder. Close the lid and let everything fully cook for 15 minutes.

The last thing to do is add the spinach and fresh or dried herbs. I will leave it up to you to choose which ones you like the most. I added a mix of everything, including basil, oregano, and tarragon. I leave the spinach for last so it doesn’t wilt too much right away. And that’s it. Enjoy!
