Bean salad with greens

I created this salad while I was on vacation and needed something easily made but healthy to eat. I ate it for breakfast and I can say it is very satisfying and will give you a ton of energy to have a great busy morning.

Ingredients:

  • 1 can of mixed beans
  • 40 g of mixed greens
  • a handful of radish sprouts
  • 1 small ripe avocado
  • a handful of cherry or plum tomatoes
  • a few basil leaves (optional)
  • some salt and pepper

Making this salad is super easy. All you have to do is wash beans, greens and radish sprouts, then chop tomatoes, avocado and basil leaves. Put everything together, add some salt and pepper to taste and it’s ready!
