I’m not really a person that would constantly crave for something sweet. And definitely not a baker. Before I changed my eating to mostly plant based, I used to prepare all sorts meats. Now I can easily make any stew, soup or other savory food but don’t ask me to bake any cakes or cookies because I simply cannot. However, oat cookies are so simple that anyone can make them. Even me.
Oat cookies are great because they are quick, does not require many ingredients and you can add whatever you like- raisins, berries, seeds. This recipe uses buckwheat flour but feel free to use any other. Also, you can add honey to make them sweeter.
Here’s what you will need:
Let’s start by crushing blueberries with a fork, then add tahini and baking soda. If you are adding honey, now would be time. Mix everything together.
Then add the rest of ingredients and mix again. Consistency should be not too wet and not too dry.
Set your oven to 180 C. While waiting for it to heat, place a baking paper on a tray and using a spoon make cookies. They do not have to be ideal shape, rolled oats will keep them looking all unique anyway.
When oven is heated, place your cookie tray inside and bake them for about 15 minutes or until they start to brown. Once cookies are ready, let them rest for a few minutes before eating.
Enjoy! And if you have leftovers, they are great to have for breakfast with a cup of coffee.
