Lately I’ve been more conscious of the bread I am buying. And looking at ingredients I realize that (almost) none of the bread that is sold in supermarkets are healthy and good for us. I do like whole grain pita breads that I find in my local shop as they only have 2 ingredients – whole grain flour and water. But a lot of the time I go there’s none left. So it is time to start making my own bread and here’s my first try.
I used buckwheat flour not because it is gluten free but because it is rich in nutrients and has a unique, earthy flavour. I also used a variety of seeds to make this bread even healthier. I soaked chia seeds first and that changed bread texture a little bit but also made it very soft and moist.

These are ingredients for a very small loaf so if you have a bigger tin, you will need to double everything.
Soak 2 tablespoons of chia seeds in a cup of water for 15 mins. While waiting, in a pan roast seeds for 3-5 minutes or until they start to brown. Be careful not to burn them.
Take a bowl with chia seeds and add seeds, soda, salt, olive oil and half a cup of water. Mix everything and start pouring buckwheat flour while stirring. When batter is ready, set oven to 200 C, line your loaf tin with baking paper. Pour batter to loaf tin, sprinkle some extra seeds to decorate and bake for about 60 mins. Stick a wooden skewer or a knife to check if it’s ready.
Remove loaf from tin and let it cool off before slicing. Enjoy with hummus or sauteed tomatoes with spinach.
