There is a big variety of lentils to choose from: red, green, brown or you may even find black lentils. Some are easier and some are more difficult to find depending on where you live. In Ireland I’d say most common are red lentils, but green are also easy enough to find. Green lentils are my favourite because they stay in shape when you cook them. Here’s a quick recipe for them, you can either eat them on their own or with a side of rice or vegetables.
Ingredients:
Start by washing green lentils in cold water, then cook them with a little bit of salt. Boil for 5-7 minutes, then reduce heat and let them simmer about 30 mins or until they are soft but not mushy.
When lentils are ready add a can of chopped tomatoes, a bit of pepper and loads of dried or fresh parsley. And here’s the secret of how to make those lentils taste really good – olive oil! Pour a good amount of olive oil once everything is done and you will transform this recipe to a new level!
Before eating top up the plate with fresh cherry tomatoes. Enjoy!
