Green lentils with tomatoes and broccoli

Green lentils, also known as French lentils, are a nutritious and versatile legume. They have a slight peppery flavor and hold their shape well when cooked, making them perfect for salads, soups, stews, and side dishes. These legumes are not only delicious but also packed with nutrients. They are a good source of protein, fiber, iron, and folate, making them a great choice for plant based diets.

Ingredients:

  • 2 cups of green lentils
  • 300 g tomatoes
  • 1 broccoli head
  • Ginger powder
  • Dried basil
  • Salt
  • Olive oil

Wash green lentils and cook them in salted water for about 20 minutes or until they are soft. Wash and cut the tomatoes and broccoli. In a pot with a thick bottom, pour a little bit of water, just on the bottom, then add broccoli, close lid and let broccoli steam for about 10 minutes, until broccoli is ready. Cooking time might vary depending on the size of broccoli pieces.

Add tomatoes, let them simmer with broccoli for a couple of minutes. Now add lentils, a lot of ginger, basil and some more salt if needed. Mix everything together and let it cook for a minute so that all flavors combine. Remove from heat and pour a couple of spoons of olive oil.
