This pasta is amazing for several reasons. First, we use whole wheat pasta which is much more nutritious than white pasta, it also has a good amount of fiber and protein. Second, there is a whole bunch of vegetables and we all know they are a source of all sorts of vitamins and minerals. And third, there’s tofu for more protein.
If this is not enough to convince you to try this recipe, then let me add that the taste is also delicious and if you like pasta, you will definitely love this!
Here are the ingredients:
Cook fusilli in salted water and with a few bay leaves. In the meantime, chop bell peppers, mushrooms and garlic. Cut tofu into cubes. Once pasta is ready, drain it, remove bay leaves and set aside for later.
In a pan pour a little bit of olive oil and fry tofu cubes until it browns. Season it with BBQ spices.
In a different pan (it can be the same but you will need a deep pan to fit everything) add frozen peas, peppers and garlic. Cook everything for a couple of minutes or until peas are warm. Then add mushrooms and again cook everything for a few minutes. When mushrooms are soft and ready, add spinach. Cook until it wilts.
Now we add pasta, chopped tomatoes, tofu and season everything with pepper and more BBQ spices.
Mix everything and the dish is ready!
