Pearl barley risotto recipe

Risotto is one of the easiest and fastest meals to make and requires only a few ingredients. It’s glycemic index is also fairly low which means this meal will keep you full for a long time.

Ingredients:

  • 450 g pearl barley
  • 500 g chestnut mushrooms
  • A bunch of spring onions
  • olive oil
  • broth or a stock cube (whichever is your favorite)
  • smoked paprika
  • a few cloves of garlic
  • pepper

Let’s wash pearl barley really well and cook it in a broth or with your favorite stock cube and a lot of smoked paprika. In the meantime, slice mushrooms, spring onions and garlic.

Cook mushrooms in a pan. If you have a sensitive stomach you can also cook garlic. I will leave it unprocessed for flavor.

When pearl barley is ready, add garlic, mushrooms and spring onion, a little bit of pepper. Pour in a good bit of olive oil. Mix everything together.
