I absolutely love potatoes and could eat them daily. Many people believe that potatoes are not healthy while in fact they are packed with nutrients. They contain plenty of vitamin C, potassium and vitamin B6. They are also a good source of fiber and are packed with antioxidants. If we prepare potatoes in a healthy way, they are a welcome addition to anyone’s diet. Here’s one of many upcoming recipes of how to make healthy potatoes.
You will notice I like to use canned beans. They are way easier to use than buying dry beans and preparing them yourself but make sure to look at ingredients on a can. You don’t want anything more but beans and water. A lot of brands add salt, preservatives, etc. so keep an eye for those.
Ingredients:
Wash, peel and cut potatoes into cubes. Boil them in salted water for 10 minutes or until they are cooked. In the meantime wash vegetables. Cut green beans in half and slice peppers. Rinse canned beans.
Take a deep pan and roast green beans and peppers with a little olive oil for a couple of minutes. They do not have to become soft, leave them crunchy. Now add potatoes and beans, sprinkle some salt, pepper and garlic granules. Mix everything together and let it cook for a minute until beans warm up.
