Recipe for Autumn – cooked Chanterelles with potatoes

If you love mushrooms, you have definitely tried chanterelles. And if you haven’t yet, you absolutely must as soon as possible! Did you know that chantarelles are rich in vitamin D, copper, and several group B vitamins? Not only that, they are also very tasty!

Chanterelle mushrooms can be used in many recipes just like simple white mushrooms, but chanterelles have way more taste. A great option is chanterelle with pasta and Béchamel sauce.

Here is the chanterelle recipe that many Lithuanians love and are proud of. It is best eaten with oven roast, boiled or mashed potatoes.

Ingredients:

  • 1 kg chanterelles
  • 1 large or 2 medium onions
  • 100 g smoked diced ham
  • 4-5 tablespoons of sour cream
  • 3 tablespoons of butter
  • a couple of spoons of olive oil (optional)
  • salt, pepper, dried oregano

Let’s start by dry cleaning chanterelles. It is best to use a small sharp knife for this to clean any dirt on the mushrooms. Shanterelles should always be cleaned while dry and only rinsed under water quickly right before cooking. Otherwise these mushrooms soak up the water and lose their form.

After cleaning mushrooms, prepare the potatoes and either cook them in the oven or boil so that they are ready on time. Chop onions and fry them in a pan together with diced ham. Use either olive oil or butter. Butter will give a better taste, but it’s okay to mix it a little with olive oil.

When onions are getting softer, pour in chanterelles that have just been washed and drained. Mix everything and cook for 15 – 20 minutes. Chanterelles will release some water, cook them until most of it is gone. Add some salt, a good dose of pepper and some dried oregano.

When most water is gone, add sour cream, mix everything and let it boil.
