Roasted aubergine and feta wrap

These wraps are very easy and fast to make, there’s also plenty of options to change it if you don’t have one or another ingredient. For example, wholewheat wraps can be substituted to any other wrap or pita bread. Instead of tzatziki you can use Greek yogurt mixed with a splash of lemon juice. You can make 2 wraps with ingredients listed below.

Ingredients:

  • 2 small wholemeal wraps
  • 1 aubergine
  • tzatziki
  • 50 g feta cheese
  • a mix of salad leaves
  • chili flakes
  • a few leaves of basil (optional)

Slice aubergine and roast it in a pan for a few minutes. If you have a grill pan, it’s great to use to get grill lines on vegetables. If you don’t have one, you can use a regular pan. There’s no need for any oil, just roast aubergine for a couple of minutes each side. At the same time thinly slice feta cheese.

Spread some tzatziki on wraps, then add a layer of salad leaves, aubergine and feta cheese. Sprinkle a little bit of chili flakes and a few leaves of basil on top. And that is all. There’s no need for salt anywhere as feta is salty itself.
