This recipe is really simple and will only take you 15 minutes to make. Perfect for a quick lunch but will keep you full until dinner. Keep in mind ingredients mentioned below are for one person only and doesn’t have to be exact amounts. Also there’s no need for salt as feta cheese is salty on it’s own.
Ingredients:
Cut tomatoes into quarters or halves, then cut feta cheese into cubes. Pour a little olive oil into a pan, then throw tomatoes in and let it sautee for a couple of minutes or until it starts to wilt. Now add spinach, let it cook for a minute and add feta cheese, season with dried or fresh basil and garlic granules. Once the cheese starts to melt, it is ready.
Put everything into plate, pour a spoon of fresh olive oil on for taste and eat right away with a piece of wholewheat pita bread or sourdough bread.
