Smoky Aubergine Rice is a beloved dish in my family. The smoky undertones of the grilled aubergine bring a unique richness to the dish, perfectly complementing the fluffy grains of rice.
Moreover, this dish comes with a range of health benefits. Aubergines, also known as eggplants, are nutritious vegetables that pack a punch of fiber, antioxidants, and essential vitamins. When combined with rice and black beans, they create a wholesome and well-balanced meal, ensuring you get a dose of nourishment and taste in every serving.
Ingredients:
Start by cooking wholegrain rice. To make it faster and easier I always buy rice in bags, so all there is to do is put bags (I used 2) in salted water and boil it for 10 minutes. In the meantime, dice aubergines and wash beans.
In a large pan, roast aubergine for a few minutes with a little bit of olive oil, salt, pepper and smoked paprika. This is what will give this dish an amazing smoky flavor. When aubergine become soft, add black beans, rice and chopped tomatoes. Mix everything and add more spices if needed.
