Spinach hummus

Hummus is a delicious and nutritious spread made from chickpeas and other ingredients. It is a good source of plant-based protein as well as healthy fats. There are plenty of varieties that you can buy in a supermarket, but if you look at the ingredients, you will likely find that instead of olive oil, rapeseed or other oils are used. I once bought an “Olive oil hummus” thinking this would be better, only to find that olive oil was one of the last ingredients in it. So I make it myself now. And it is very easy to make as long as you have a food processor.

This recipe includes spinach to make it even more healthy, tasty and give it a vibrant green color. You can enjoy this hummus as a dip, spread, or ingredient in other recipes.

Ingredients:

  • 1 can of chickpeas (400g)
  • 100 g spinach
  • 3 tbsp. tahini
  • 6 tbsp. olive oil
  • 1 lemon juice
  • 2 big cloves of garlic
  • a pinch of salt

Start by washing chickpeas and spinach, then peel garlic. Put chickpeas into your food processor together with garlic and give it a few pulses. Now add the rest of ingredients and pulse it a few times again. I needed add more olive oil or lemon juice, I do not suggest adding water as it will not give any extra taste. Run the processor until hummus is smooth.

Once transferred to a bowl, pour a little more olive oil on top. Enjoy!
