Tofu salad with greens and blueberries

This summery salad has a good mix of flavors with juicy blueberries, while salad greens and seeds give plenty of crunch. Soft tofu and creamy avocado gives this salad fullness and nourishment.

Ingredients:

  • 100 g mixed greens
  • 200 g blueberries
  • 1 medium sized avocado
  • 200 g tofu
  • a handful of pumpkin and sunflower seeds
  • a mix of dried herbs
  • salt, pepper
  • turmeric powder

Drain and chop tofu, then roast it in a pan for a few minutes with a little bit of salt, pepper and turmeric powder. Wash and dry blueberries and mixed greens (whatever is your favorite, just make sure there’s not too much arugula/rocket, as it gives a very strong peppery taste).

In a salad bowl combine ingredients: greens, blueberries, tofu, avocado and seeds. Mix everything together. You can add a little bit of olive oil if you want, but seeds and avocado is your healthy fat here so there’s really no need for anything else.
